During discussion in #909 I concluded that we should revive the eJabberd appliance. As I noted over there, whilst the front end we did provide (Speeqe) died, even providing it without the web front end still has value (e.g. our Mumble appliance).
(Note that whilst it not technically a new appliance, as it has been a long time since we provided it and it will likely need some significant work, I've added the 'new-appliance' tag)
