Time/date doesn't seem to respect timezone in API requests

Describe the bug
Timestamps in the API response is 1 hour behind. Timestamp in the web UI are correct.

To Reproduce
Steps to reproduce the behavior:

1. Set timezone to UTC+1 (London)
2. Run test
3. Call API /latest
4. Timestamps are 1 hour behind

Expected behavior
Timestamps in API responses should respect timezone and daylight savings etc
